Pesto Garbanzo Pizza

INGREDIENTS

Basil Pesto Hummus

  • 6 cups Bush’s Best® Garbanzo Beans, Low Sodium, Drained, Rinsed
  • 3 cups Basil Pesto
  • 2 Tbsp Tahini Paste
  • .75 cups Olive Oil

Lemon-Herb Marinated Garbanzo Beans

  • 6 cups Bush’s Best® Low Sodium Garbanzo Beans, Drained, Rinsed
  • 1 Tbsp Thyme, Fresh, Chopped
  • 1.5 Tbsp Rosemary, Fresh, Chopped
  • .75 cups Lemon Juice
  • 6 Tbsp Olive Oil
  • 1.5 tsp Kosher Salt
  • .75 tsp Ground Black Pepper

  • 6 Pizza Dough, Prepared, 16-oz. Round
  • Olive Oil (As needed)
  • All Purpose Flour (As needed)
  • 1.5 cups Parmesan Cheese, Grated

Garnish

  • 1.5 cups Parmesan Cheese, Grated

  • 6 cups Bush’s Best® Garbanzo Beans, Low Sodium, Drained, Rinsed
  • 3 cups Basil Pesto
  • 2 Tbsp Tahini Paste

  • 6 cups Bush’s Best® Low Sodium Garbanzo Beans, Drained, Rinsed

Pesto Garbanzo Pizza

Garnish

  • 1.5 cups Parmesan Cheese, Grated
  • 3 Tbsp Crushed Red Pepper Flakes
  • 6 Tbsp Oregano, Fresh, Chopped
  • .75 cups Lemon Juice, Fresh
  • .75 cups Olive Oil

DIRECTIONS

  1. BASIL PESTO HUMMUS: Combine all ingredients in a food processor until smooth and creamy.
  2. LEMON-HERB MARINATED GARBANZO BEANS: Mix ingredients together in a bowl until well incorporated. Cover and reserve refrigerated for at least 1 hour to marinate.
  3. PESTO GARBANZO PIZZA: Pre-heat a convection oven with a pizza stone to 500ºF.
  4. On a clean surface, roll out each dough out to a 12-inch pizza round, using flour as needed to prevent from sticking.
  5. Remove pizza stone from the oven and brush the surface with enough olive oil to coat.
  6. Set pizza dough over the stone and brush the surface with enough oil to coat.
  7. Top each pizza with 1 cup Basil Pesto Hummus, 1 cup Lemon-Herb Marinated Garbanzo Beans, and 1/4 cup of grated Parmesan cheese.
  8. Bake in the oven for 15–20 minutes or until crust is golden and crispy.
  9. PRESENTATION: Garnish each pizza with 1/4 cup Parmesan cheese, 1.5 tsp crushed red pepper flakes, and 1 Tbsp oregano. Finish each pizza with 2 Tbsp fresh lemon juice and 2 Tbsp olive oil. Cut into 8 pieces.
