Pesto Garbanzo Pizza
Offer up a whole new kind of slice with a plant-forward, Mediterranean spin on pizza. Start with a fresh-baked crust and top with creamy basil pesto hummus, savory lemon-herb marinated Garbanzos, a fresh squeeze of lemon, and a dusting of Parmesan cheese and crushed red pepper flakes.

INGREDIENTS
Basil Pesto Hummus
- 6 cups Bush’s Best® Garbanzo Beans, Low Sodium, Drained, Rinsed
- 3 cups Basil Pesto
- 2 Tbsp Tahini Paste
- .75 cups Olive Oil
Lemon-Herb Marinated Garbanzo Beans
- 6 cups Bush’s Best® Low Sodium Garbanzo Beans, Drained, Rinsed
- 1 Tbsp Thyme, Fresh, Chopped
- 1.5 Tbsp Rosemary, Fresh, Chopped
- .75 cups Lemon Juice
- 6 Tbsp Olive Oil
- 1.5 tsp Kosher Salt
- .75 tsp Ground Black Pepper

- 1 recipe/1.5 qt. Basil Pesto Hummus Recipe

Garnish
- 1.5 cups Parmesan Cheese, Grated
- 3 Tbsp Crushed Red Pepper Flakes
- 6 Tbsp Oregano, Fresh, Chopped
- .75 cups Lemon Juice, Fresh
- .75 cups Olive Oil
DIRECTIONS
- BASIL PESTO HUMMUS: Combine all ingredients in a food processor until smooth and creamy.
- LEMON-HERB MARINATED GARBANZO BEANS: Mix ingredients together in a bowl until well incorporated. Cover and reserve refrigerated for at least 1 hour to marinate.
- PESTO GARBANZO PIZZA: Pre-heat a convection oven with a pizza stone to 500ºF.
- On a clean surface, roll out each dough out to a 12-inch pizza round, using flour as needed to prevent from sticking.
- Remove pizza stone from the oven and brush the surface with enough olive oil to coat.
- Set pizza dough over the stone and brush the surface with enough oil to coat.
- Top each pizza with 1 cup Basil Pesto Hummus, 1 cup Lemon-Herb Marinated Garbanzo Beans, and 1/4 cup of grated Parmesan cheese.
- Bake in the oven for 15–20 minutes or until crust is golden and crispy.
- PRESENTATION: Garnish each pizza with 1/4 cup Parmesan cheese, 1.5 tsp crushed red pepper flakes, and 1 Tbsp oregano. Finish each pizza with 2 Tbsp fresh lemon juice and 2 Tbsp olive oil. Cut into 8 pieces.
