KC Cheesy Corn and Chili

Inspired by the cheesy corn Kansas City peeps eat alongside their BBQ, we present a delicious riff on KC chili. Ground pork, onion, zesty Black Beans, and roasted corn simmer in a combination of KC BBQ sauce and Pale Ale and mix with melting mozzarella, cheddar, and Monterey jack cheeses. Garnish with more cheese, bacon bits, and green onion.

KC Cheesy Corn and Chili

  • 1.5 cups Vegetable Oil
  • 3 lb Ground Pork
  • 3 Qt Yellow Onion, ¼-inch Diced
  • .75 cup Tomato Paste
  • 4.5 cup Pale Ale
  • 2.25 Qt Bush’s Best® Easy Entrées® Taco Fiesta Black Beans, Drained
  • 4.5 cup Kansas City BBQ Sauce, Prepared
  • 1.5 Qt Roasted Corn Kernels
  • 1.5 Qt Three-Cheese Blend, Mozzarella, Cheddar, Monterey Jack, Shredded
  • 1.5 Tbsp Kosher Salt
  • 1.25 tsp Ground Black Pepper

Garnish

  • 1.5 cups Three Cheese Blend, Shredded
  • 1.5 cups Bacon Bits, Prepared
  • 1.5 cups Green Onion, Fresh, Thinly Sliced

  • 1.5 cups Vegetable Oil
  • 3 lb Ground Pork
  • 3 Qt Yellow Onion, ¼-inch Diced
  • .75 cup Tomato Paste
  • 4.5 cup Pale Ale
  • 2.25 Qt Bush’s Best® Easy Entrées® Taco Fiesta Black Beans, Drained
  • 4.5 cup Kansas City BBQ Sauce, Prepared
  • 1.5 Qt Roasted Corn Kernels
  • 1.5 Qt Three-Cheese Blend, Mozzarella, Cheddar, Monterey Jack, Shredded
  • 1.5 Tbsp Kosher Salt
  • 1.25 tsp Ground Black Pepper

Garnish

  • 1.5 cups Three Cheese Blend, Shredded
  • 1.5 cups Bacon Bits, Prepared
  • 1.5 cups Green Onion, Fresh, Thinly Sliced

DIRECTIONS

  1. Add vegetable oil to a pot set over medium-high heat. Add ground pork, breaking up into small pieces with a wooden spoon. Cook for 7 minutes or until meat reaches an internal cooking temperature of 155°F. Adjust salt and pepper to taste.
  2. Add onions and sauté for 5 minutes or until onions are translucent.
  3. Stir in tomato paste and cook for 2 minutes. Deglaze the pan pale ale and cook until liquid is reduced by half.
  4. Except the cheese, stir remaining ingredients together. Bring chili to a simmer, then reduce the heat to medium. Cover and simmer for 15 minutes, stirring occasionally. Adjust seasoning with salt and pepper.
  5. Turn off the heat. Fold in the shredded cheese until melted.
  6. For one portion, serve 1 cup of chili topped with 1 Tbsp shredded three cheese blend, 1 Tbsp bacon bits, and 1 Tbsp green onion.
