Dirty Rice and Beans

Cajun goes to Kansas City in a comfort dish with big flavor. Smoked andouille sausage kicks it off with seasoned Black Beans, followed by Cajun seasoning, salt, pepper, and white rice. Serve with a drizzle of Kansas City BBQ Sauce and parsley.

INGREDIENTS

  • 1.5 cups Vegetable Oil
  • 2.25 lb. Smoked Andouille Sausage Links, ½-inch Diced
  • 2.25 Qt Bush’s Best® Easy Entrées® Taco Fiesta Black Beans, Drained
  • 3 Tbsp Cajun Seasoning
  • 3 Qt White Rice, Cooked, Chilled
  • Kosher Salt (To Taste)
  • Ground Black Pepper (To Taste)
  • 3 cups Kansas City BBQ Sauce, Prepared
  • .5 cup Parsley, Fresh, Chopped

INGREDIENTS

  • 1.5 cups Vegetable Oil
  • 2.25 lb. Smoked Andouille Sausage Links, ½-inch Diced
  • 2.25 Qt Bush’s Best® Easy Entrées® Taco Fiesta Black Beans, Drained
  • 3 Tbsp Cajun Seasoning
  • 3 Qt White Rice, Cooked, Chilled
  • Kosher Salt (To Taste)
  • Ground Black Pepper (To Taste)
  • 3 cups Kansas City BBQ Sauce, Prepared
  • .5 cup Parsley, Fresh, Chopped

DIRECTIONS

  1. Heat vegetable oil in a large pot or rondeau set over medium.
  2. Add smoked andouille sausage and cook for 8 minutes, stirring periodically.
  3. Add remaining ingredients. Sauté for 5 minutes on medium-high heat. Add salt and pepper.
  4. For one portion, serve ½ cup of rice & beans drizzled with 1 Tbsp Kansas City BBQ Sauce. Garnish with ½ tsp parsley.
  5. Add remaining ingredients and sauté for an additional 5 minutes over medium high to bring all the flavors together; Adjust seasoning with salt and pepper.
  6. For each portion; Top 1/2 cups of dirty Cajun beans and rice with a 1 Tbsp(s) drizzle of Kansas City BBQ sauce before garnishing with 1/2 tsp(s) of fresh chopped parsley.
