BBQ Dinner Bites

Call them portable, dippable, or just down-right delectable, these panko-breaded bites of smashed Bush’s Best® Bean Pot Baked Beans mixed with shredded pork are perfect for lunch on the go, kids menus, and appetizers.

INGREDIENTS

  • 1, #10 can Bush's® Best® Bean Pot Baked Beans, drained
  • 2 lbs Allegro House Smoked Pork, finely shredded and sauced with smoky BBQ sauce
  • 8 Eggs, beaten
  • 3 cups All purpose flour
  • 3 cups Panko Breadcrumbs, finely ground

INGREDIENTS

  • 1, #10 can Bush's® Best® Bean Pot Baked Beans, drained
  • 2 lbs Allegro House Smoked Pork, finely shredded and sauced with smoky BBQ sauce
  • 8 Eggs, beaten
  • 3 cups All purpose flour
  • 3 cups Panko Breadcrumbs, finely ground

DIRECTIONS

  1. INSTRUCTIONS FOR FRYING: Preheat deep fryer to 350°F. INSTRUCTIONS FOR CONVECTION OVEN: Preheat convection oven to 425°F or conventional oven to 450°F.
  2. Divide drained baked beans and smash one half into a "paste." Add smoked pork to the un-smashed beans and then add the smashed beans to the bean and pork mixture. Stir to incorporate.
  3. Portion the mixture using a #30 scoop and form into a ball, then place in a freezer for 10 to 15 minutes (this will make breading easier).
  4. Set up three bowls: one with flour, one with the beaten eggs and one with the finely ground panko breadcrumbs.
  5. First, dredge one pork and bean ball in the flour, next dip in the egg mixture and then repeat. After second dip in eggs, dredge in the panko breadcrumbs, shaking off any excess and place on sheet tray. Hold in refrigerator.
  6. COOK IN DEEP FRYER: Fry each Dinner Bite for 3 minutes at 350°F and sprinkle with salt once fried. COOK IN CONVECTION OVEN: Bake Dinner Bites for 8 to 10 minutes. Allow to cool slightly before serving. **The BBQ Dinner Bites could be par-fried to set the breading and then finished off just before serving too.
