Baked Beans, brisket, bacon, and spicy BBQ sauce make this un-4-gettable. Beef Brisket is slow cooked with a brown sugar rub, then rolled into a tortilla with homemade Carolina slaw, diced bacon, and Bush’s Best® Baked Beans, before being drizzled with hot sauce.

INGREDIENTS

  • 1, #10 can Bush’s Best® Bean Pot Baked Beans
  • 58 Flour tortillas, 12"
  • 14 lbs 8 oz Seasoned beef, cooked brisket, cubed (portioned from slow cooked 30 lb brisket*)
  • 14 lbs 8 oz Cooked, applewood smoked bacon, chopped
  • 7 lbs 4 oz Carolina coleslaw, homemade
  • Hot sauce (as desired)
  • *assumes approximately 50% yield on brisket

INGREDIENTS

  • 1, #10 can Bush’s Best® Bean Pot Baked Beans
  • 58 Flour tortillas, 12"
  • 14 lbs 8 oz Seasoned beef, cooked brisket, cubed (portioned from slow cooked 30 lb brisket*)
  • 14 lbs 8 oz Cooked, applewood smoked bacon, chopped

DIRECTIONS

  1. Chop 15 lb uncooked beef brisket into cubes. Apply dry rub (curry powder, brown sugar, kosher salt, cracked black pepper, liquid smoke, dry mustard, dark chili powder, cumin). Slow cook at 225°F for 9 hours.
  2. Chop fully cooked applewood smoked bacon. Lightly pat with paper towel to remove excess grease.
  3. Heat Bush’s Best® Bean Pot Baked Beans and in a pot and hold hot until use.
  4. Combine the shredded cabbage, Carolina BBQ sauce, and hot sauce to create the Carolina coleslaw.
  5. To prepare one burrito, place ingredients in a 12” flour tortilla in the following order: 4 oz of brisket, 4 oz of bacon, 2 oz of beans, 2 oz of coleslaw.
  6. Before rolling the burrito, drizzle hot sauce over the filling. Roll up burrito and enjoy.
